Easy Shrimp Taco/Burrito

As you know, every once in a blue moon I’ll come up with a ‘couldn’t-be-easier’ meal idea. This is one of those recipes…providing you like shrimp. All you need is a package of McCormick Zesty Garlic Shrimp Taco mix, frozen (cooked/peeled/de-veined) shrimp and tortillas. Optional items, depending on your tastes, are:

• Sweet, mini bell peppers, thinly sliced
• Shredded lettuce
• Grilled shoestring onions
• Sour Cream
• Salsa

Once you’ve compiled the ingredients, prep couldn’t be easier:

– Heat 2 tablespoons of oil in skillet
– Pour in seasoning mix, shrimp, veggies
– Cook for 4-6 minutes
– Spoon into warmed tortillas with sour cream and assorted condiments

Personally, it seems like I perpetually have a bag of those little mini bell peppers in the fridge, so the addition of those were a no-brainer (plus, they make the dish visually beautiful and gives it some crunch). I also like to add some cayenne pepper to the mix.

The quickest way I’ve learned to thaw the frozen shrimp is to grab a large bowl, toss in the shrimp and fill it with enough hot water (from the faucet, don’t boil it) to cover the shrimp, then cover the top of the bowl with a plate and let it sit while you prep everything else. By the time you’re done, the shrimp will have thawed and you can easily pull the tails off of them.

I forget how I stumbled across this, via YouTube, but it’s a phenomenon that I never knew had a name (and it didn’t until 2010): Autonomous Sensory Meridian Response, or ASMR.

Apparently it’s even hard to define, but the best definition I found was this:

ASMR is a physical sensation characterized by a pleasurable (but not necessarily sexual) physical sensation characterized by pleasurable tingling that typically begins in the head and scalp, and often moves down the spine and through the limbs.

Whatta Crock!

I‘ve been wanting a Crock Pot for a while now, I just never seem to either have the money and/or can’t seem to find one I like. I want one because my friend in Michigan, as well as some local friends, seem to make some of the easiest, most delicious-sounding meals. My problem is, I’m a slave to design and color. All the ones I see are so humongous and/or bland. What I’d REALLY like is one like we had when I was growing up. BUT, if I recall, the lid was lost or chipped or something and even if we DID still have it, I’m sure some random distant relative laid claim to it, since it disappeared from the countertop.

Bad economy? meh. High unemployment rate? eh. Natural disasters? pshaw. Let’s talk about what’s really important: peanut butter allergies amongst the new generation of pussies and their victimized “parents”.

Yes, gone are the days of buzz words like Dyslexia (that’s so 80’s!), Mad Cow Disease, ADD, ADHD, OCD, Autism, Bipolar and Asbergers.
